As Founder and Editor-at-Large of Spear's, William writes regularly on restaurants, wine and hotels. Here are some selections from his favourite tables, maitre d's and epicurian travel adventures in the role of roving gastro-critic-at-Large.

WC writes:

"One of my journalist heroes when I worked as a young foreign correspondent in America in the 1990s was R.W Apple Jr of the New York Times whose bulk was testament to the alacrity that he put into tracking down the best restaurants in any city he was travelling to with the U.S president as a key member of the White House press corps. I only met the Anglophile Johnny once and that was at the funeral of Nixon in 1993 in Yorba Linda, California, when he sat next to me in the press tent.  He was a true gent of the old button-down-collar school and never left for Europe without his Michelin Guide. Despite being a brilliant political analyst and reporter it is for his 'collected' food and wine writing columns that Apple will be best remembered with their titles telling you everything you need to know about his foodie qualifications.  My favourite volume is Far Flung and Well Fed: The Food Writing of R.W Apple Jr. Another is called Apple's Europe: An Uncommon Guide."
